Macadamia Nut Piña Colada

Another Friday night at The Invisible Isle has come and gone, and this week my wife was thinking of having another Macadamia Nut Chi Chi, but I wanted to try something a bit different… and with Rum. Since a Chi Chi is basically a Piña Colada with Vodka instead of Rum, I figured why not try a Macadamia Nut Piña Colada.

I did a bit of searching around for some good Piña Colada recipes (you would think more tiki recipe books would list that… but people seem to not think “tiki” when thinking of a Piña Colada), and found one that I thought I could update to incorporate some Macadamia Nut liqueur.

So here it is…

Macadamia Nut Piña Colada

Ingredients:

  • 1.5 ounces Trader Vic's Macadamia Nut Liqueur
  • 1 ounces Smith & Cross Rum
  • 1 ounces Matusalem Rum
  • 1 ounces Pineapple Juice
  • 1 ounces Coconut cream
  • 1/2 ounce Freshly Squeezed Lime Juice
  • 1/2 ounce lemon juice
  • a couple small Pineapple Chunks
  • Add ingredients to shaker, fill with crushed ice.
    Flash blend until slightly foamy
    Pour into hurricane glass, add ice as necessary to fill.
    Garnish with pineapple chunks and cherry skewered together. (and a fancy swizzle stick)
